Macaroon Trees with Sugar Snow

macaroon treeThat Martha, she did it again. Why make just regular coconut macaroons for the holidays when you can make them look like a forest of beautiful snow-covered trees. The recipe is so simple, requires no melting of butter whatsoever. All you need is a mixing bowl, baking sheet and parchment paper. I ended up making a second batch, knowing 5 of my 10 trees wouldn’t make it till Christmas.

Macaroon Trees with Sugar Snow

Makes about 10 trees

You will need:

2 1/2 cups shredded sweetened coconut

1/2 cup sugar (if you use unsweetened coconut, use 3/4 cup)

2 egg whites, lightly beaten with a fork

4 teaspoons vanilla extract

a pinch of salt

powdered sugar (for dusting)


1. Preheat oven to 340.

2. Combine sugar, coconut, eggs, vanilla and salt in a bowl. Mix until completely combined with your fingers.

3. Using your fingers, make the trees on a parchment-lined baking sheet. Use about 2 Tablespoons of the mixture and pinch at the top to form a point.

4. Bake for 12-14 minutes – watch carefully so they don’t burn. Let them cook for a full 15 minutes before touching – the sugar needs to harden and cool.
