Detox Day 2

As day three begins I feel incredible. Resisting the temptation of on-sale Valentine’s candy at work and dumplings for dinner, I’m still going strong. At happy hour with my co-workers I had a seltzer with lemon….a first.  As I’ve said, it’s important to stick to the plan, but hey, life can be unpredictable. I had a long day of work and class after work and by 9:00pm I was dying. Instead of waiting another hour to cook soup for myself at home, I stopped into Whole Foods in Union Square. Not the best, nor cheapest option; But I was desperate. Milling around the steam trays and salad bar, I decided on some raw spinach leaves, steamed bok choy and this “detox salad” with broccoli, carrots and some other clean things. It wasn’t delicious, but it did the trick and kept me on track. I could thus then go meet my boyfriend for dumplings and not literally die of jealous starvation.

With that slight detour, I’m amending Day 2 and here’s a little preview of Day 3 which promises to be just as unpredictable as Day 2.

Day 2

7:30 am Glass of hot water with 1 Tbs lemon juice

8:00 am peppermint tea

9:00 am Veggie juice from cart with carrots, spinach, lemon, apple, kale + lemon (seriously, the lemon makes all the difference)

10:00 am Green tea

12:00pm ¼ chicken breast with green beans (leftovers)

1:30 pm small bag of almonds

3:30 pm apple

5:00 hummus and cucumbers

9:30 pm raw spinach leaves and “detox salad” from whole foods

10:00 pm green tea

 

Day 3

7:30 am Glass of hot water with 1 Tbs lemon juice

9:00 am Veggie juice from cart with carrots, spinach, lemon, apple, kale + lemon (seriously, the lemon makes all the difference)

10:00 am Green tea

12:00pm Cucumber and avocado soup

1:30 pm small bag of almonds

3:30 pm fruit of some kind

7:30 pm Steamed fish with detox pesto

10:00 pm peppermint tea
And now for the recipes:

Cucumber Avocado Soup (from GOOP)

You will need:

1 whole cucumber (peeled mostly and seeded)

Zest of 1 lime

2 Tbs lime juice

2 small avocados

A tiny pinch of salt

Method:

1. Place all of this in a blender and mix until liquefied. You may need to add a pinch of water if it’s too thick.

Detox Pesto

This came about entirely by accident. I had a giant bag of parsley left over, as well as some almonds and garlic. When there are nuts and garlic, I can only think of one thing…PESTO. Now that I think about it, this is more of a chimmichuri sauce than a pesto, but whatever.

You will need:

1 cup Italian parsley, roughly chopped

5-6 almonds, roughly chopped

2 garlic cloves

3 Tbs olive oil

Method:

1. Blend all the dry ingredients until they will blend no more in a food processor. Slowly add the olive oil. I think I’ll serve mine with steamed fish tonight.
