Halloumi is a Cypriot sheep’s milk cheese that doesn’t melt. Seriously….it will not melt. Instead, it takes on the delicious flavors of the flame and crusts beautifully. Pear it with pan-grilled peaches and add a flavorful herb like basil for cool, summer deliciousness. Speaking of pairing, I picked up a nice dry rose at Trader Joe’s.
Grilled Peaches and Halloumi
You will need:
1 peach
3 oz Halloumi cheese
1 Tbs basil
Method:
1. Heat up a cast iron pan, grill pan or whatever you have that will get really really hot.
2. Cut the peach in half along the natural fold (lengthwise). Slice each half again so you have 4 rings. Lightly coat in olive oil. Slice the cheese into 1/4 inch piece and grill. Grill the peaches as well.
3. Cut the basil into small strips (a chiffonade if you will) and sprinkle on top.
