While I love cooking for others, once in a while it feels really good to be cooked for by someone else. Especially if that someone is armed with delicious fresh greens and beautifully marbled steak. A few weeks ago I went to dine with some friends in their beautiful loft in Bushwick and was served among other amazing dishes, a raw asparagus salad. Okay, I know….asparagus makes your pee smell, but suck it up cause this salad is too crispy and delicious to miss. A quick google search led to me to this recipe from Smitten Kitchen, and here’s my version!
Raw Asparagus Salad
You will need:
One bunch of the thickest asparagus you can find
2-3 Tbs olive oil and lemon juice for dressing
Shaved parmesan
1 Tbs roasted pine nuts
Method:
Essentially, you want to peel the asparagus into ribbons with a vegetable peeler and toss it with the dressing. Add pine nuts and cheese to your liking. I also bet thinly sliced pear would give this a sweet twist.
