Okay, so I was hard-pressed to make up a title that incorporated Rhubarb and Sith, so I came up with nothing. A rhubarb stalk wouldn’t get you very far in a light saber match anyways. If you haven’t noticed, it’s rhubarb time and farmers markets and even grocery stores are teaming with this pink-hued celery-resembling thing. If you’ve never had rhubarb, you are missing out. It’s slightly tangy and bitter, but also sweet and goes so well with other fruits like strawberries. It’s tangyness is most like an uncooked cranberry, but it’s definitely got a little something extra. I bought three stalks at the farmer’s market a few days ago and was itching to make something and thus turned to my sad pantry. (remember: no buying new ingredients except fresh produce). I was definitely headed in the dessert direction and thankfully had flour and sugar, phew. A few sad looking strawberries and a mealy apple looked decrepit in my fridge, so in they went. A crumble seemed like the best direction to go in since it’s easy and is basically fail-proof. Essentially I just mixed chopped rhubarb, strawberries and apples with some sugar and some lemon juice and spread them in a thin layer in a pie dish. The crumble part I made out of….well whatever I could find…some instant oatmeal, some flour, sugar, almond meal and a pinch of salt. Stuck it in the oven at 350 foe 45 minutes. Delicious!
